Dim Sum Siu Mai 燒賣
- Soak 4 oz of shiitake mushrooms in water until soft, cut it into small pieces. Set aside
- Peeled and devein 4 oz of shrimp, cut into small pieces. Set aside
- Prepare 6 oz of ground pork (80/20 lean/fat), add into a big bowl
- Add cut shrimp and mushrooms into big bowl, then add half Tbsp of minced ginger. Mix well
- Add 1 Tbsp of soy sauce, 1 Tbsp of oyster sauce, half tsp of white pepper powder, 1 Tbsp of cornstarch, 2 Tbsp of water. Mix well
- Add 1 Tbsp of sesame oil and 1 Tbsp of oil. Mix well and let the ingredients sit for overnight
- Wrapping instructions: put a spoonful of ingredients in the middle of Siu Mai wrapper, use your thumb and index finger to make a circle, have the wrapper push through the circle. Use a spoon to push ingredients inside the wrapper.
- Place the wrapped Siu Mai in a steamer cook for 10 minutes
