Curry Chicken with Coconut Milk 椰汁咖哩雞
1. Cut 6 chicken thighs into pieces (4 pieces per thighs)
2. Marinate chicken with pinch of salt and pepper, 1 Tbsp of cornstarch and 1 Tbsp of oil
3. Cut 2 large potatoes, 2 carrots and 1 yellow onion into pieces, set aside
4. Medium heat cooking pan with 1 Tbsp of oil, add chicken cook to golden brown (about 5 minutes)
5. Add 1 Tbsp of minced garlic, 1 Tbsp of minced gingers, 3 pieces of bay leaves, 1 Tbsp of yellow curry powder, 1 can of coconut milk, 1 tsp of salt and 1 cup of water
6. Mix well then add onion, potatoes and carrots
7. Close the lid and turn to medium low heat cook for 15 minutes.
8. Adjust the favor by adding salt or sugar if needed. Ready to serve
