Macapuno Tarts (Young sweet coconut pastry crust)

YOU WILL NEED:
For the crust:
- 1/2 cup softened butter
- 1/2 cup sugar
- 1 large egg
- 2 cups all purpose flour
For the Filling:
- 1 tbsp flour
- 1 can condensed milk
- 1 egg yolk
- 1/2 cup drained sweetened macapuno
- 2 tsp butter

WHAT TO DO:
- Prepare the Crust: Cream butter and sugar until light and soft. Add the egg, then the flour, and continue mixing untill well combined. Form into a log then divide the dough into 12 pieces. Put 1 ball of the dough into a muffin cup. Press to fit the sides and bottom. Repeat the procedure until you're done with the crust. Set aside.
- Prepare the Filling: In a saucepan, put all the ingredients and cook over low heat until becomes thick and slightly dry. Let it cool for a few minutes( 3-5 mins).
- Spoon the mixture over the crusts. Baked in a preheated oven (175 degree C) about 15-20 minutes or until the tarts turn into light brown. Remove from oven and let it cool completely before serving.
Note. Please take at look after 15 minutes the baked crust. The reason is to make sure that it never over baked.
