Crab, tomatoes noodle soup - Vietnamese
Ai an Canh Bun khong? (Is anyone want crab, tomatoes noodle soup?)
- 2 lbs of tomatoes
- 1 can of rieu cua (in picture)
- 2 cartons of unsalted chicken stock
- 1 package of fried tofu
- 2 teaspon of salt
- 3 teaspoon of chicken powder
- 3 teaspoon of fish sauce
- 2 teaspoon of shrimp paste (in picture)
- 1 bag of xl vermicelli noodles
- 1 bunch of green onions (divide white parts and green parts- thinly slices)
- 4 organic chicken eggs
Washed and cut tomatoes into 1/4, put it on a side. In a pot, add 1 teaspoon of oil, then add the white parts of the green onion into the pot. Cook it until you can smell the aroma of the onions, then add slices of tomatoes. Add salt, chicken powder and stirfry it for a few mins. Then pour 2 cartoons of chicken stocks into the pot. Turn the heat down to low, add then add the shrimp paste. In a separate pot, you have been boiling the xl vermicelli noodles only 1/2 way cooked. Pour the noodles out, rinse a little of water, then add into the broth pot. Bring it to 3/4 of cooking times, add fried tofu, then add the eggs has mixed in with the rieu cua( in picture) into the pot. Bring it to boil, taste adjusted with fish sauce, or and chicken powder. Turn off the stove and add the green part of the green onions into th a pot. Then you are done. The ong choy can cooked in the same pot of the pot that you were cooked the noodles.
