Beef Neck Bone Mushroom Soup

  1. Rinse 6 pounds of beef neck bones in cold water
  2. Put bones in a cooking pot fill with water, add 3 slices of gingers, half yellow onion and 2 Tbsp of cooking wine. Turn heat to high until boiled
  3. Remove brown stuffs and grease continue cook for 5 minutes
  4. Take the bones out and rinse it with cold water
  5. Put beef neck bones into a new pot of water with 2 slices of gingers and 3 bay leaves. Turn to high heat until boiled
  6. Once the water boiled, turn to low heat simmer for 2.5 hours
  7. Add 1-2 tsp of salt and 2 cups of sliced mushrooms, turn to medium heat cook for 15 minutes.
  8. Sprinkle some chopped scallions, ready to serve
