Sushi rice: cooking instructions

Place 59g of sushi rice with 240ml of cold water per persona in a saucepan. Bring to the boil, stirring occasionally. Reduce the heat to the very low and simmer for 18-20 minutes or until the water the water has been absorbed. Remove from the heat and cover. Leave to stand for 10 minutes.
