Orange Chicken 橙汁雞
- Cut 2 chicken breasts into bit size
- Marinate chicken with 1/2 cup of orange juice, 1 tsp of salt for an hour
- Mix 1 cup of flour, 1 cup of cornstarch, 2 eggs, 1 tsp of salt and 1 Tbsp of oil. (Adjust the coating thickness by increase cornstarch if needed)
- Add cut chicken with the flour mixture, make sure each pieces of chicken are well-coated
- Medium heat a pot of hot oil, deep fry chicken until golden brown (depend on the thickness, around 4-6 minutes)
- Don’t crowd the chicken to avoid stick together
- Take the chicken out, set aside for 2 minutes then put it back to oil deep fry for additional 2 minutes.
- Once the chicken done, set aside
- Mix 1 cup of fresh orange juice with 1/4 cup of soy sauce, 1 tsp of sesame oil, 1/2 cup of sugar, 1 tsp chili pepper, 1/4 cup of rice vinegar, 1 tsp of garlic powder, 1 tsp of minced ginger and 1 tsp of orange zest.
- Medium heat the orange sauce in cooking pan
- Add cornstarch mixed with water to thicken the sauce
- Add chicken into orange sauce, mix well.
- Sprinkle some chopped scallions, ready to serve
