Steamed Pork with Chinese Preserved Vegetables 梅菜蒸肉片

There are many different kinds of Chinese preserved vegetables, it can be 梅菜, 咸菜, 酸菜, 榨菜, 冬菜. This recipe is specifically for 梅菜 (fully air-dried type)

  1. Cut 8 oz of pork sirloin into small slices
  2. Marinate with 1 Tbsp of soy sauce, pinch of white pepper powder, 2 Tbsp of cornstarch mixed with water and 1 Tbsp of oil for few hours
  3. Soak the dry preserved vegetable in cold water for an hour
  4. Rinse it with cold water several times and use paper towels to dry
  5. Cut the preserved vegetable into small pieces (remove the stem part at the end)
  6. Medium heat cooking pan with 1 Tbsp of oil
  7. Add cut preserved vegetable, keep stirring to avoid burning
  8. Add 1 tsp of minced ginger, 1 Tbsp of cooking wine and 1 tsp of sesame oil continue stir for 5 minutes.
  9. Take it out. Set aside to cool off
  10. Mixed the marinated pork with preserved vegetable and 1 Tbsp of oil in a steam pan
  11. Steam for 15 minutes and ready to serve
