Noodles with Black Bean Chicken 豉汁雞球麵
- De-bone and de-skin 2 pieces of chicken thighs
- Cut chicken into large cubes
- Marinate chicken with 1 Tbsp of soy sauce, 1/4 tsp of white pepper powder, 1 Tbsp of cornstarch and 1 Tbsp of oil
- Cut half green bell pepper and one yellow onion into large cubes, set aside
- Pre-cooked one package/box of fresh wheat noodle (aka. Lo Mein noodle) in hot boiled water for 6 minutes, rinse with cold water and let it dry out. Set aside
- High heat cooking pan with 1 Tbsp of oil, add noodles stir-fry for few minutes. Set the noodles on serving plate
- Turn heat to medium, add 1 Tbsp of oil and 1 Tbsp of minced garlic, then add 1.5 Tbsp of black bean sauce
- Add chicken stir-fry until chicken turn golden brown, then add 1 Tbsp of soy sauce and 1 Tbsp of sugar
- Add cut bell pepper and yellow onion, then 1.5 cup of chicken broth continue cook for few more minutes
- Add cornstarch mixed with water to thicken the sauce
- Pour the chicken, bell pepper and yellow onion on top of the noodles. Ready to serve.
