Claypot Eggplant with Roast Pork 火腩茄子煲
- Cut one pound of ready-made roast pork (火腩) into large pieces
- Cut 2 large eggplants into 3 inches strip.
- Brush oil on cut eggplants
- Cook eggplants in air-fryer at 400˚F for 6 minutes, set aside
- Medium heat cooking pan with 1 Tbsp of oil and 1 Tbsp of minced garlic
- Add cut roast pork stir-fry for few minutes
- Add 1 Tbsp of oyster sauce, 1 Tbsp of sugar, 1/2 tsp of white pepper powder, 1 cup of chicken broth and 1 cup of hot water.
- Mix well and transfer everything to claypot
- Add cook eggplants, turn down to medium low heat. close the lid and cook for another 3-5 minutes
- Add 1 tsp of sesame oil. Ready to serve.
