Duck in Dried Tangerine Peel 陳皮鴨
- Soak 2 full dried tangerine peel until soft, cut into small strips. Set aside
- Prepare half duck, trim out fat and excessive skin
- Dry the duck skin by using kitchen paper towels
- Brush 2 Tbsp of dark soy sauce inside out the duck, let it sit for an hour
- Medium high heat a cooking pan with an inch of oil
- Put the duck in the oil once the oil is hot, deep fry the duck for 15 minutes. Turn the duck upside down half way. Once done, take it out set aside
- Medium low heat cooking pan with 1 Tbsp of oil
- Add 2 cloves of garlic, 4 large slices of ginger, 4 cut scallions, then 1 Tbsp of soy sauce, 1 Tbsp of oyster sauce, 1 tsp of white pepper powder, 1 Tbsp of cooking wine, 1 Tbsp of sugar, cut tangerine skins and 2 cups of hot water
- Once the sauce is hot, put the duck in the pan and close lid cook for 40 minutes.
- Pour the sauce on top of the duck every 10-15 minutes
- Cut the duck in pieces and pour the remaining sauce on the top. Ready to serve
