Peach Crumb Muffins
Peach Crumb Muffins
Ingredients
- 1 & 3/4 cups flour (cake or all purpose)
- 3/4 cup white sugar
- 1/3 cup vegetable oil
- 1/2 cup plain yoghurt
- 2 eggs
- 1 & 1/2 cups chopped canned peaches
- 1 tsp vanilla essence
- 2 tsp baking powder
- 1/4 tsp salt
For the crumbly mixture
- 1/2 cup flour
- 1/4 cup sugar (white or brown)
- 3 Tbsp melted butter
- Mix all these ingredients together to form a crumbly mixture.
Instructions
- In a bowl sift in flour, baking powder and salt then whisk well.
- In another bowl add oil, sugar and mix. Then add vanilla and mix in one egg at a time.
- Add yoghurt to the wet ingredients and mix. Add the flour mixture to the wet ingredients. Mix gently.
- Add the chopped peaches. Gently mix. Divide the dough in a prepared muffin tray.
- Sprinkle the crumbly mixture on top. If you like you can add some chopped peaches on top.
- Bake in a preheated oven for 20-25 minutes at 180 Degrees Celsius.
