Crispy Duck (Modified Version) 香酥鸭

  1. Mixed 2 Tbsp of salt and 1 Tbsp of white pepper powder rub inside and outside the duck
  2. Mixed 3 star-anises, 1 Tbsp of pepper-corns, 1 cinnamon stick, 3 large slices of ginger and 1 bundle of scallions all put inside the duck
  3. Put the duck in fridge overnight
  4. Steam the duck in medium heat for 1 hour 15 minutes
  5. Once done, let the duck cool off. Cut the duck in half and remove all ingredients inside the duck
  6. Put the duck back in fridge for few hours without cover
  7. Set air-fryer at 375˚F for 18 minutes, flip the duck over half way
  8. Once done, cut the duck in pieces and ready to serve
