Crispy Duck (Modified Version) 香酥鸭
- Mixed 2 Tbsp of salt and 1 Tbsp of white pepper powder rub inside and outside the duck
- Mixed 3 star-anises, 1 Tbsp of pepper-corns, 1 cinnamon stick, 3 large slices of ginger and 1 bundle of scallions all put inside the duck
- Put the duck in fridge overnight
- Steam the duck in medium heat for 1 hour 15 minutes
- Once done, let the duck cool off. Cut the duck in half and remove all ingredients inside the duck
- Put the duck back in fridge for few hours without cover
- Set air-fryer at 375˚F for 18 minutes, flip the duck over half way
- Once done, cut the duck in pieces and ready to serve
