Korean Japchae (Glass Noodles Stir-Fried with Vegetables)

1. Soak sweet potato noodles (aka. glass noodles) in water until soft
2. Boil glass noodles in hot water for 6 minutes, rinse in cold water for 2 minutes
3. Use strainer to dry it, add 1 Tbsp of sesame oil mix well to avoid the noodle stick together. Set aside
4. Cut 1 carrot, 4 shiitake mushrooms, handful of cilantro in strips. Set aside
5. Cut 1 chicken breast in strips
6. Marinate chicken with 1 Tbsp of soy sauce, 1 tsp of white pepper powder, 1 Tbsp of cornstarch and 1 Tbsp of oil
7. Medium heat cooking pan with 1 Tbsp of oil, add 2 scrambled eggs when the oil gets hot. Cook the eggs like a pancake and cut in strips
8. Medium heat cooking pan with 1 Tbsp of oil and 1 Tbsp of minced garlic
9. Add chicken stir fry for few minutes, then add cut shiitake mushrooms and carrot continue cook for few minutes
10. Add 2 Tbsp of soy sauce, 1.5 Tbsp of sugar and 1.5 Tbsp of sesame oil, then add noodles, cilantro and eggs.
11. Add 2 Tbsp of sesame seeds. Mix well and ready to serve
