Korean Kimchi-Bokkeumbap (Chicken Kimchi Fried Rice)
1. Cut 1 chicken breast in slices
2. Marinate chicken with 1 Tbsp of soy sauce, 1 tsp of white pepper powder, 1 Tbsp of cornstarch and 1 Tbsp of oil for few hours
3. Medium heat cooking pan with 1 Tbsp of oil
4. Add 2 scrambled eggs cook to well-done. Take it out set aside
5. Turn the cooking pan to low heat, then add 1 Tbsp of oil, 1 Tbsp of minced garlic, 1 Tbsp of minced ginger and half cup of chopped yellow onion (cook for 2-3 minutes)
6. Turn the cooking pan to medium heat, add cut chicken, cook until well-done
7. Add kimchi (cut in small pieces) with the chicken, then add 2 cups of cooked white rice
8. Stir-fry for few minutes, then add scrambled eggs, 1 Tbsp of soy sauce and 1 Tbsp of kimchi juice
9. Add 1 tsp of sesame oil and sprinkle of scallions. Ready to serve.
