Chicken with vegetables (Haiti)

Chicken with vegetables.

Ingredients:

  • 300 g boneless chicken breast (cut into cubes)
  • 2 white eggs
  • 4 small onions (cut into wedges)
  • 1/2 carrot (sliced)
  • 3 garlic cloves (minced)
  • bunch of scallions (cut into chunks and slices )
  • 2 Chilies (cut into pieces)
  • 3 tbsp corn starch
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp vinegar
  • 1/3 tsp black pepper
  • 1/2 tsp sugar
  • a pinch of salt
  • Corn starch slurry (1 corn starch + 2 water)
  • Cooking oil

Instructions:

  1. In a large bowl, add chicken pieces + white eggs + corn starch + salt, then mix all together.
  2. Heat oil in your pan, add chicken pieces. Fry until golden brown, transfer to kitchen paper and set aside.
  3. In the same pan with leftover oil, add minced garlic + onion wedges, stir fry for a few seconds.
  4. Add carrot slices, stir fry for a few seconds.
  5. Seasoning with soy sauce, oyster sauce, vinegar, sugar.
  6. Add fried chicken pieces back to the pan, add corn starch and toss well. (If needed add a little water to get saucy texture)
  7. Finally add scallion strips and chili pieces, black pepper, stir for a few seconds.

Garnish with chopped scallions.
