Chicken with vegetables (Haiti)
Chicken with vegetables.
Ingredients:
- 300 g boneless chicken breast (cut into cubes)
- 2 white eggs
- 4 small onions (cut into wedges)
- 1/2 carrot (sliced)
- 3 garlic cloves (minced)
- bunch of scallions (cut into chunks and slices )
- 2 Chilies (cut into pieces)
- 3 tbsp corn starch
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp vinegar
- 1/3 tsp black pepper
- 1/2 tsp sugar
- a pinch of salt
- Corn starch slurry (1 corn starch + 2 water)
- Cooking oil
Instructions:
- In a large bowl, add chicken pieces + white eggs + corn starch + salt, then mix all together.
- Heat oil in your pan, add chicken pieces. Fry until golden brown, transfer to kitchen paper and set aside.
- In the same pan with leftover oil, add minced garlic + onion wedges, stir fry for a few seconds.
- Add carrot slices, stir fry for a few seconds.
- Seasoning with soy sauce, oyster sauce, vinegar, sugar.
- Add fried chicken pieces back to the pan, add corn starch and toss well. (If needed add a little water to get saucy texture)
- Finally add scallion strips and chili pieces, black pepper, stir for a few seconds.
Garnish with chopped scallions.
