Braised hairfish with fermented glutinous rice(糟辣带鱼)
Ingredients:
- edible oil
- hairfish
- Pixian chili paste
- Sichuan pepper
- garlic
- ginger
- vinegar
- salt
- scallion
- caraway
Cooking tips:
- Fry hairfish in oil under low fire until yellow, then keep aside
- Fry chili paste, scallion, garlic slices ,Sichuan peppercorns and shredded ginger until fragrance, put fried hairfish in wok, add water and 4 spoon of fermented glutinous rice, stew for 5 minutes until sauce become thicker
- Take hair fish out, sever in a plate, cover with thicker sauce, sprinkle cutted scallions and caraway.
