Homemade Chinese Braised Pork (紅燒肉)
- Pork Belly cut in pieces, broil in hot water (add 1 tablespoon of cooking wine)
- Cook in 10 minutes, then rinse in cold water
- Place 2 tablespoon of oil into medium heat pan, add sugar to slow cook to red color, then add water
- Add the rinsed pork belly into the pan, stir-fry to get each piece of pork with the sugar coating
- Add star anise, ginger, red onion, peppercorn, bay leaves and cinnamon stick.
- Add Soy sauce, white pepper powder, rock sugar and cooking wine, then water. (Add dark soy sauce if needed)
- Add salt if needed.
- Slow heat cook for an hour until the meat turn soft.
