Homemade Chinese Braised Pork (紅燒肉)

  1. Pork Belly cut in pieces, broil in hot water (add 1 tablespoon of cooking wine)
  2. Cook in 10 minutes, then rinse in cold water
  3. Place 2 tablespoon of oil into medium heat pan, add sugar to slow cook to red color, then add water
  4. Add the rinsed pork belly into the pan, stir-fry to get each piece of pork with the sugar coating
  5. Add star anise, ginger, red onion, peppercorn, bay leaves and cinnamon stick.
  6. Add Soy sauce, white pepper powder, rock sugar and cooking wine, then water. (Add dark soy sauce if needed)
  7. Add salt if needed.
  8. Slow heat cook for an hour until the meat turn soft.
