Homemade Shanghainese Stir fry Egg Whites (賽螃蟹)
Ingredients:
- Broccoli (1 crown)
- Eggs (6 egg white only)
- Shrimp (3 medium)
- Milk (1/4 cup)
- Salt (1 tsp)
- White pepper (1/2 tsp)
- Sesame oil (1 tsp)
Directions:
- Cut Broccoli in pieces, boil in hot water with 1 tsp of salt for few minutes
- Cut shrimp into small pieces, rinse in hot water for few seconds
- Scramble egg whites, milk, salt, white pepper, sesame oil and shrimp
- Medium heat cooking pan with 4 Tbsp of oil
- Make sure the oil is hot before put the scrambled ingredients in
- Slightly move around the fluffy egg whites for 30 seconds
- Place the egg whites on a paper towel to absorb excessive oil before put on the top of broccoli
- That’s it, ready to serve
