Homemade Shanghainese Stir fry Egg Whites (賽螃蟹)

Ingredients:

  • Broccoli (1 crown)
  • Eggs (6 egg white only)
  • Shrimp (3 medium)
  • Milk (1/4 cup)
  • Salt (1 tsp)
  • White pepper (1/2 tsp)
  • Sesame oil (1 tsp)


Directions:

  1. Cut Broccoli in pieces, boil in hot water with 1 tsp of salt for few minutes
  2. Cut shrimp into small pieces, rinse in hot water for few seconds
  3. Scramble egg whites, milk, salt, white pepper, sesame oil and shrimp
  4. Medium heat cooking pan with 4 Tbsp of oil
  5. Make sure the oil is hot before put the scrambled ingredients in
  6. Slightly move around the fluffy egg whites for 30 seconds
  7. Place the egg whites on a paper towel to absorb excessive oil before put on the top of broccoli
  8. That’s it, ready to serve
