Chinese Braised Baby Back Ribs

  1. Baby back ribs cut in pieces, boil in hot water (add 2 slices of gingers, few green onions and 1 Tbsp of cooking wine)
  2. Cook for 10 minutes, then rinse the ribs in cold water
  3. Place 2 tablespoon of oil into medium heat pan, add rock sugar slow cook to red color
  4. Add the rinsed ribs into the pan, stir-fry to get each piece of ribs with the sugar coating
  5. Add star anise, gingers, red onion, peppercorns, bay leaves and cinnamon stick
  6. Add soy sauce, white pepper powder and 1 cup of water
  7. Add salt if needed.
  8. Low heat cook for 30-35 minutes, then high heat to dry up the sauce.
  9. Add 1 tsp of sesame oil
