Cold Chicken with Scallions Sauce (蔥油雞)
- Boil chicken legs (3) with green onions (3) and gingers (few splices) into hot water high heat cook for 5 minutes.
- Turn off the heat and let it sit for another 15 minutes
- Take the chicken out and put them into iced water for 10 minutes
- Once the chicken cool off, pull the meat off the bone
- Medium heat cooking pan with 3 Tbsp of oil, add few slices of gingers, few cloves of garlic and few green onions
- Turn lower heat and cook for 5 minutes
- Filter the oil out and pour into mix of 1 Tbsp of soy sauce, 1 Tbsp of oyster sauce, 1/2 tsp of salt
- Pour the sauce onto the chicken, add chopped scallions and ready to serve
