Homemade Sesame Cold Squid Salad
Great light appetizer idea prior to a main meal. You can substitute squid with shrimp or use both. I used frozen squid rings, defrost and cooked in boiled water for 30-45 seconds, then cool off in ice water.
Salad ingredients include cucumbers, carrots, bean sprouts, red onions, scallion and cilantro.
Sesame dressing includes:
- Soy sauce - 2 Tbsp
- Sugar - 2 Tbsp
- Water - 3 Tbsp
- Rice vinegar - 1 Tbsp
- Minced garlic - 2 Tbsp
- Sesame oil - 1 Tbsp
- Chili oil - 1 Tbsp (if want spicy)
- Sesame seeds
