Homemade Scallops Stir-Fried with Vegetables (帶子小炒皇)
Chinese cuisine focus on Wok Gas (鑊氣), a high heat temperature cooking technique that brings the burn favors to the food by flipping the wok. Below was my modified version
- Seasoned one pound of scallops with 1 tsp of salt, 1 tsp of white pepper, 1 Tbsp of cornstarch and 2 Tbsp of oil
- Medium heat cooking pan with 2 Tbsp of oil
- Add 1 Tbsp of minced garlic
- Add scallops pan seared about a minute on each side
- Turn to high heat, add sliced zucchini, carrots, jalapeño and scallions
- Add 1 Tbsp of soy sauce and stir-fried for couple of minutes
- If you use gas stove, flip the cooking pan several times may able catch the food on fire
- Add 1 tsp of sesame oil and ready to serve
