Homemade Roasted Pei Pa Chicken (琵琶雞 )

  1. Cut chicken from the backbone and lay flat
  2. Mixed 2 Tbsp of salt, 2 Tbsp of sugar, 3 Tbsp of five spices powder spread all over the chicken (inside and skin)
  3. Air-dry chicken overnight.
  4. Set oven to 375°F roasted for an hour. Hint: the more dryness off the skin, the more crispy it can be.
