臘腸雞粒炒飯 Chinese sausage and Chicken Fried Rice
- Prefer leftover rice (less moisture)
- De-bone and de-skin chicken thigh, cut into small cube size
- Marinated chicken with 1 Tbsp of soy sauce, 1 tsp of white pepper, 1 Tbsp of cornstarch and 1 Tbsp of oil for couple of hours
- Cut Chinese sausage into small pieces
- Medium heat up cooking pan with 2 Tbsp of oil
- Add chicken stir fried to medium then add Chinese sausage, cook chicken to well done (Take all out of the cooking pan filter out excessive oil)
- Medium heat cooking pan with 2 Tbsp of oil, add 2 scrambled eggs, then add 2 cups of leftover rice.
- Turn high heat stir-fried rice until medium brown, add 1 Tbsp of soy sauce, cooked chicken and Chinese sausage. Continue stir-fried for another minute
- Add a handful of bean sprouts, 1 tsp of sesame oil and ready to serve
