臘腸雞粒炒飯 Chinese sausage and Chicken Fried Rice

  1. Prefer leftover rice (less moisture)
  2. De-bone and de-skin chicken thigh, cut into small cube size
  3. Marinated chicken with 1 Tbsp of soy sauce, 1 tsp of white pepper, 1 Tbsp of cornstarch and 1 Tbsp of oil for couple of hours
  4. Cut Chinese sausage into small pieces
  5. Medium heat up cooking pan with 2 Tbsp of oil
  6. Add chicken stir fried to medium then add Chinese sausage, cook chicken to well done (Take all out of the cooking pan filter out excessive oil)
  7. Medium heat cooking pan with 2 Tbsp of oil, add 2 scrambled eggs, then add 2 cups of leftover rice.
  8. Turn high heat stir-fried rice until medium brown, add 1 Tbsp of soy sauce, cooked chicken and Chinese sausage. Continue stir-fried for another minute
  9. Add a handful of bean sprouts, 1 tsp of sesame oil and ready to serve
