Eggplant with Garlic Sauce (鱼香茄子)

  1. Marinated ground pork (1 pound) with 2 Tbsp soy sauce, 2 Tbsp of cornstarch and 1 Tbsp of oil
  2. Cut eggplant and scallions into 2 inches pieces
  3. Medium heat cooking pan with 2 Tbsp of oil and 2 Tbsp of minced garlic
  4. Add ground pork cooked to medium done
  5. Add eggplant and shredded bamboo with the pork
  6. Cook until eggplant turn soft
  7. Add 2 Tbsp of soy sauce, 2 Tbsp of sugar, 1 Tbsp of rice vinegar and 1 tsp of white pepper (1 Tbsp of chili oil if like spicy), then 1/4 cup of water
  8. Add cornstarch mixed with water to thicken the sauce
  9. Add handful of scallions, 1 tsp of sesame oil and ready to serve.
