Eggplant with Garlic Sauce (鱼香茄子)
Eggplant with Garlic Sauce (鱼香茄子)
- Marinated ground pork (1 pound) with 2 Tbsp soy sauce, 2 Tbsp of cornstarch and 1 Tbsp of oil
- Cut eggplant and scallions into 2 inches pieces
- Medium heat cooking pan with 2 Tbsp of oil and 2 Tbsp of minced garlic
- Add ground pork cooked to medium done
- Add eggplant and shredded bamboo with the pork
- Cook until eggplant turn soft
- Add 2 Tbsp of soy sauce, 2 Tbsp of sugar, 1 Tbsp of rice vinegar and 1 tsp of white pepper (1 Tbsp of chili oil if like spicy), then 1/4 cup of water
- Add cornstarch mixed with water to thicken the sauce
- Add handful of scallions, 1 tsp of sesame oil and ready to serve.
