Homemade Soy Sauce Chicken (Simplified and Gluten-free version) 豉油雞

  1. Boil 5 pieces of chicken thighs with 2 slices of gingers and couple of scallions for 5 minutes
  2. Take the chicken thighs out and place into ice water for 10 minutes
  3. Set the chicken broth on the side for future use.
  4. Medium heat cooking pot with 1 cup of gluten-free soy sauce, 1 cup of sugar, 5 cup of chicken broth (saved from step 1), 3 star anises and 3 slices of gingers
  5. Once the sauce heat up, put the chicken thighs in medium heat cook for 15 minutes
  6. Turn the heat off and let the chicken sit in the pot for 20-25 minutes
  7. Take the chicken out, cut it, set aside
  8. Filter out all the ingredients inside the sauce, add cornstarch mixed with water to thicken out the sauce
  9. Pour the sauce on the top of chicken and ready to serve
