Homemade Soy Sauce Chicken (Simplified and Gluten-free version) 豉油雞
- Boil 5 pieces of chicken thighs with 2 slices of gingers and couple of scallions for 5 minutes
- Take the chicken thighs out and place into ice water for 10 minutes
- Set the chicken broth on the side for future use.
- Medium heat cooking pot with 1 cup of gluten-free soy sauce, 1 cup of sugar, 5 cup of chicken broth (saved from step 1), 3 star anises and 3 slices of gingers
- Once the sauce heat up, put the chicken thighs in medium heat cook for 15 minutes
- Turn the heat off and let the chicken sit in the pot for 20-25 minutes
- Take the chicken out, cut it, set aside
- Filter out all the ingredients inside the sauce, add cornstarch mixed with water to thicken out the sauce
- Pour the sauce on the top of chicken and ready to serve
