Vietnamese Cold Shrimp Salad
Vietnamese Cold Shrimp Salad
- Boil 1 pound of shrimp in hot water, rinse with cold water. Peel shell and set aside.
- Shredded the following vegetables: Half yellow onion, half red onion, half yellow pepper, half jalapeño pepper, 2 carrots, 1 cucumber, 1 tomato, 2 scallions and handful of cilantro
- Salad dressing: 1 Tbsp of fish sauce, 1 Tbsp red chili paste, 1 Tbsp of minced garlic, 4 Tbsp of sugar, 6 Tbsp of water and half fresh lemon juice
- Mix shrimp, vegetables and salad dressing, ready to serve
