Sesame Cold Cucumbers 拍黄瓜
- Wash (1) cucumbers (prefer English cucumber because less seeds) with 1 Tbsp of salt. Keep the skin.
- Cut cucumber into 2 inches shape
- Mix cut cucumber with 1 Tbsp of salt, set aside for 45 minutes
- Rinse the cucumber with cold water to make sure no salt left
- Use paper towel to dry the cucumber
- Add 1 Tbsp of soy sauce, half Tbsp of rice vinegar, 1 Tbsp of sugar and half Tbsp of sesame oil with 3 cloves of chopped garlic, 3 Thai red chili peppers and half chopped jalapeño.
- Put inside refrigerator for few hours before serve
