Steam Chicken with Shiitake Mushroom in Black Bean Garlic Sauce
Steam Chicken with Shiitake Mushroom in Black Bean Garlic Sauce (豉汁冬菇蒸雞)
- Soak 5 shiitake mushrooms until soft, cut in half and set aside
- Cut 3 fresh Thai red chili peppers, set aside
- Cut 5 chicken legs into pieces
- Marinate chicken with 2 Tbsp of soy sauce, 1 Tbsp of minced garlic, 2 Tbsp of black soybean (either fresh beans or ready made paste would be fine), 2 Tbsp of cornstarch and 2 Tbsp of oil for few hours
- Mix chicken with mushroom and put red chili pepper on the top
- High heat steam for 20 minutes
- Turn off heat and let it sit for 10 minutes
- Sprinkle some scallions or cilantro on the top before serving
