Spicy Chicken Claypot 麻辣雞煲
- Cut 4 chicken thighs into pieces
- Marinate chicken with 1 Tbsp of soy sauce, 1 Tbsp of sesame oil, 1 tsp of salt, 2 tsp of sugar, 1 tsp of white pepper powder and 1 Tbsp of cornstarch for few hours
- Prepare 4 cloves of garlic and cut 1 yellow onion in large pieces
- Cut handful of cilantro and scallions in 2 inches length, set aside
- Low heat claypot with 1 Tbsp of oil
- Add garlic and onion, then add 2 Tbsp of spicy soy bean sauce, 3 red chili peppers, 2 star anises, 3 bay leaves cook for a minute.
- Add cut chicken, turn to medium heat stir fry for 5 minutes, then add half Tbsp of chicken broth
- Cover the lid cook for another 10-12 minutes but remember stir the bottom once a while
- Add cut cilantro and scallions
- Close the lid cook for another minutes. Ready to serve
