Shredded Pork and Vermicelli Soup 街邊碗仔翅
1. Soak 3 shiitake mushrooms until soft, cut in strip. Set aside
2. Soak 2 oz of wood-ears (fungus 木耳) until soft, cut in strip. Set aside
3. Soak 1 small package of vermicelli noodle until soft. Set aside.
4. Boil 4 oz of pork in 10 cups of water for 30 minutes.
5. Cut 3 slices of ginger into thin strip (the thinner the better). Set aside
6. Take the pork out and shredded the meat
7. Low heat cooking pan with 1 Tbsp of oil, add shredded gingers and shiitake mushroom slowly cook for few minutes
8. Add 6 cups of broth from cooking pork, then add wood-ears and shredded pork cook until boil
9. Add 1 Tbsp of soy sauce, 1 Tbsp of oyster sauce, 1 Tbsp of chicken bouillon, 1 tsp of salt, 1 tsp of white pepper powder
10. Add cornstarch mixed with water to thicken the broth, then add vermicelli noodles and one scrambled egg
11. Add 1 tsp of sesame oil, ready to serve.
