Pork with Melon and Shiitake Mushroom Soup 冬菇節瓜肉片湯
- Cut pork loin in slices, marinated with salt, set aside
- Soak shiitake mushroom and cut in cube shape, set aside
- Remove melon skin and cut in large cube shape, set aside
- High heat boil 2 cups of chicken broth, 4 cups of water and 3 slices of ginger. Add all the ingredients
- Turn medium heat cook for another 15-20 minutes (or until melon turn soft)
- Add salt if needed. Ready to serve
