Homemade Beef Noodle Soup (紅燒牛肉牛肚麵)
Recipes for the beef and beef tripe:
- Trim the extra fat out from beef pot roast and beef tripe
- Boil the beef tripe in hot water with 3 slices of ginger and scallion for 15 minutes.
- Rinse beef tripe with cold water
- Add 4 cups of water, 4 Tbsp of soy sauce, 1 tsp of white pepper, 1 tsp of salt, 3 large slices of ginger, 1 chopped red onion, 4 star anises, 2 large garlic gloves, 1 Tbsp of peppercorns and 2 bay leaves in an Instant Pot.
- Add beef and beef tripe, and set to “soup” for 1 hour 10 minutes.
- Once done, let it sit for another 15 minutes before serving
