Homemade Yangzhou fried rice
1. Pre-cook white rice, set aside to cool off
2. Peel and devein shrimp, rinse with 2 Tbsp of salt and dry out with paper towel. Set aside
3. Cut Char Siu into cube size. Set aside
4. Cut scallions into small pieces. Set aside
5. Scramble 3 eggs with 1 tsp of salt and 1 tsp of sesame oil. Set aside
6. Medium heat cooking pan with 1 Tbsp of oil. Add shrimp cook for 30-40 seconds and take it out.
7. Add 3 Tbsp of oil, add eggs when the oil got hot.
8. Stir fry the eggs for 15 seconds then add white rice
9. Keep stir fry the egg and rice until both mix well (3-5 minutes)
10. Add Char Siu stir fry for 2 minutes
11. Turn to high heat, add shrimp, 1 tsp of salt, 1 Tbsp of soy sauce and scallions stir fry for one more minute.
12. Ready to serve
