Chinese Scramble Eggs with Chives and Roast Pork 韭菜叉燒蝦仁煎蛋
1. Peeled and devein shrimp. Seasoned with salt and pepper and oil
2. Cut chives vegetable and roasted pork (char siu) into 2 inches length, set aside
3. Scramble 4 eggs with 1 tsp of salt and 1 tsp of sesame oil
4. Mix eggs with vegetable and pork in a big bowl
5. Medium heat cooking pan with 1 tsp of minced garlic
6. Add shrimp and cook both sides for a minute. Take it out set aside
7. Turn to medium low heat with 2-3 Tbsp of oil (need oil cover the entire cooking pan)
8. Fill up the pan with egg, chives and roast pork. Do not stir, just slowly move the eggs around to avoid burn
9. Add shrimp on the top of the eggs
10. Flip over when one side turn golden brown (normally 2-3 minutes)
