Cantonese Boiled Shrimp 白灼蝦
1. Rinse the shrimp in cold water and drain to dry
2. Boil a pot of hot water with 3 large slices of ginger
3. Add shrimp and cook for 1.5-2 minutes depends on the size of the shrimp. (Cantonese boiled shrimp normally use medium size shrimp like 36/40. If you like to use jumbo shrimp like 16/20 is fine but make sure double the cook time)
4. Scallion sauce ingredients: 1 green onion, 2 Thai red chili pepper, half tsp of sugar, 3 Tbsp of soy sauce and 1 Tbsp of oil
5. Cut scallions and red pepper into small pieces
6. Add half tsp of sugar, mix well
7. Add 1 Tbsp of hot oil, then add 3 Tbsp of soy sauce. Ready to serve
