Homemade Poached Chicken in Broth

1. Boil 8 cups of water in a cooking pot with 3 large slices of ginger and 3 scallions
2. Add 2 Tbsp of cooking wine (optional)
3. Add 3 chicken legs cook for 10 minutes
4. Remove chicken from the pot and put it in ice water for 10 minutes
5. Remove the grease and brown stuffs in the pot, turn to high heat.
6. Add 2 Tbsp of salt and 1 star anise.
7. Optional: luxury version add either dry shrimp or dry scallops (江瑤柱) ~ 4 oz.
8. Put the chicken back in the pot cook for 10 minutes
9. Turn off heat and let the chicken sit in the hot broth for 15 minutes
10. Polk a chop stick into the chicken. Turn the heat back to high and repeat step 7 & 8 one more time if there’s red juice comes out from the chicken.
11. Boil lettuce for a minute and set on bottom of a large serving bowl
12. Cut the chicken and place it on top of the lettuce,
13. Use a strainer to filter out chicken broth as clean as possible.
14. Turn to medium heat, add cornstarch mix with water to thicken the broth.
15. Pour the broth on chicken. Ready to serve.
