Chicken with Shiitake Mushroom and Sweet Potato Glass Noodles
1. Cut 4 chicken drumstick into pieces
2. Marinate chicken with 2 Tbsp of soy sauce, 1 Tbsp of cornstarch and 1 Tbsp of oil for several hours
3. Soak sweet potato glass noodle in cold water until turn soft. Set aside
4. Soak 6 pieces of shiitake mushroom in cold water until turn soft. Set aside
5. Cut half green bell pepper and couple of red chili pepper. Set aside
6. Low heat cooking pan with 2 Tbsp of oil
7. Add shiitake mushrooms, 3 slices of gingers and 2 Tbsp of minced garlic slow cook for couple minutes
8. Turn to medium heat, add chicken
9. Cook chicken until golden brown on both side, add 1 Tbsp of soy sauce, 1 Tbsp of oyster sauce, 1 tsp of sugar, 1 tsp of white pepper powder and 1 cup of chicken broth
10. Transfer chicken to a clay pot (optional)
11. Close the lid medium heat cook for 5-7 minutes
12. Add glass noodles, turn to low heat for few minutes
13. Add green bell pepper, red chili pepper and 1 tsp of sesame oil.
14. Cook another 1-2 minutes, ready to serve
