Claypot Glass Noodles with Beef and Seafood 海鮮肥牛粉絲煲
1. Soak 2 small packages of cellophane noodle (glass noodle) in water until soft. Set aside
2. Cut 4 cups of Napa cabbage into 2 inches piece. Set aside
3. Prepare 12 pieces of headless medium size shrimp, 8 pieces of mussel and 2 cups of squid. Set aside
4. Prepare 4 oz of hot-pot beef (extremely thin-slices beef with medium fat). Set aside
5. Chop 1 Tbsp of minced garlic, 1 Tbsp of minced ginger and 2 Tbsp of scallion.
6. Mixed all minced garlic, ginger and scallions into a big bowl, add 2 Tbsp of hot oil, then 2 Tbsp of soy sauce. Set aside
7. Put the Napa cabbage on bottom of the claypot, then put glass noodles on top of the cabbage
8. Put all seafood on top of the glass noodles, then 2-3 cups of chicken broth
9. Medium heat the claypot until the chicken broth boiled. Make sure stir the bottom not to burn the cabbage
10. Add beef into claypot and mix it up with the seafood and glass noodles. Cover the lid continue cook for a minute
11. Add the bowl of mixed garlic, ginger, scallions with soy sauce and oil on top of everything. Mix it up a little bit. Ready to serve.
