Si puliscono con un panno e si aprono a metà, si mettono quindi ad essiccare in forno tiepido.
Quando saranno essiccati ed avranno preso un colore bruno, si cospargono di anice, oppure si appoggia su ogni metà una mandorla.
Indi si chiudono e si conservano in vasi in luogo asciutto.
