Chocolate fondant
Ingredients:
- 120 g coconut oil melted
- 2 tbsp cocoa powder
- 100 g dark chocolate, broken pieces
- 2 eggs
- 2 egg yolks
- 120 g coconut sugar
- 1 tbsp coconut flour
Method:
Preheat oven to 200°C and put backing tray in oven.
Grease 4 small pudding moulds. Dust moulds with cocoa powder. Add coconut oil, 1 tbsp of cocoa powder and chocolate to heatproof bowl, set over simmering water, stir until melted.
Combine coconut flour, and leave to cool.
Wisk together egg yolks, coconut sugar and a pinch of salt until pale and moussey.
Gently fold in melted chocolate mixture, spoon into moulds, chill for 1 hour. Put on hot baking tray and cook for 15 mins. Stand for 30 sec. And serve.
