Cuocere senz' acqua i fichi mescolando spesso e schiacciandoli, con il mestolo, in modo da ottenere una poltiglia.
Passare il tutto al setaccio e determinare il peso.
Aggiungere al passato il 70% di zucchero e mettere nuovamente a bollire con qualche scorzetta di limone.
A cottura completa togliere, lasciare raffreddare e mettere nei vasi.
