Smoked salmon salad with green beans and wild rocket
Perfect for the office lunch as well
Ingredients:
- 150 grams of smoked salmon, roughly chopped
- 2 cups of green beans, trimmed and halved
- 1 cup of wild rocket (arugula) leaves
- 1 tablespoon of extra virgin olive oil
- 1 tablespoon of fresh lemon juice or vinegar
- Salt and pepper to taste
- Optional: 1 tablespoon of capers for an extra burst of flavor
- Optional: for spicy flavour add some chilly flakes
Instructions
- Cook the Green Beans:
- Close the lid and set the IP as steam program for:
- 3 minutes without waiting the pressure natural release

- Assemble the Salad:
- In a large bowl, combine the smoked salmon, blanched green beans, and wild rocket leaves.
- If you’re using capers and or chilly flakes, add them to the bowl as well.
- Dress the Salad:
- Drizzle the olive oil and some vinegar (or lemon) over the salad.
- Season with salt and pepper to taste.
- Gently toss everything together, making sure the dressing coats the ingredients evenly.
- Pack for the Workplace:
- If you’re preparing this salad to take to work, you might want to pack the dressing separately to keep the leaves from wilting.
- Place the salad in an airtight container and the dressing in a small jar or container.
- Ready to Serve:
- When it’s time to eat, pour the dressing over the salad and toss well to combine.
