Gettare i fagiolini in pentola in acqua bollente lasciandoveli qualche minuto, quindi disporli sopra un canovaccio in maniera da farli asciugare.
Metterli poi in un recipiente di vetro alternando con strati di sale fino.
Quando si vorranno usare si sciacqueranno più volte in acqua fresca e si giocheranno in acqua bollente senza sale.
