MELANZANE SOTT' OLIO ( 2° METODO)

Tagliare a spicchi le melanzane, lasciarle un poco ad asciugare al sole e poi bollirle per 15 minuti in un recipiente di terracotta contenente aceto salato.
L' aceto deve ricoprire le melanzane.
Scolare, lasciare asciugare e riporre in vaso di vetro coi soliti aromi.
Ricoprirle d' olio.
