Far cuocere i teneri interni in acqua salata, sospendendo però la cottura appena l'acqua bolle.
Sgocciolarli bene e metterli freddi in vasi di vetro o di ceramica colmando il vaso con aceto e un leggero strato d ' olio fine.
Tappare il vaso.
Non mettere erbe odorose.
