Carciofi al naturale

Liberati i carciofi dalle foglie esterne più dure, si lavano in acqua tiepida normalmente salata e acidulata con succo di limone.
Quindi si accomodano nei vasi di vetro e si ripongono con acqua salata fatta in precedenza bollire e poi raffreddare.
Chiusi in vasi ermeticamente si mettono nella pentola a graticcio con acqua fredda che poi si porterà ad ebollizione, facendola bollire per 50 minuti.
Al momento dell'uso si passano in acqua fredda.
