Sweet coconut rice
1. Toast for 5-10 minutes the rice with ghee butter, cloves, cardamom and cinnamon stick in pieces
2. Add coconut milk (+ water if needed ) on it.
Add 2 phalanx of liquid above the rice as good quantity for cooking
3. Keep boiling it until water is absorbed. Remember to close the lid and stir occasionally for not making rice sticking
4. When water is almost absorbed, mixing moving the rice from the bottom to the top like showed in the video above
5. Now starting preparing nuts. Cut in pieces raising, almonds and cashews
6. Now starting preparing nuts. Add ghee butter and making it hot
7. Add nut on ghee butter and do not get scared if it pop
8. Keep mixing them until raising increase the size like a ball (see picture).
And make sure to not burn them like in picture. Stop fire earlier
9. Set them aside and allow them to get colder
10. Prepare coconut dehydrated with a little of water. Press the coconut pieces to allow water to go in and hydrated again.
Mixing it now in the hot pan with ghee butter.
11. Add honey on it to add sweetness
12. Add sugar to add sweetness and caramelised everything
13. When it's ready it should get similar to a paste
14. Add nuts now on it and mixing well
15. Now as final step, add the nuts with coconut on the coconut rice and mix well
16. Mix properly
17. Let it cool down with the lid for at least 1 hour to allow rice to absorb flavours.
If the rice is cold, turn on flame just a few minutes to give heat and allow the sweetness to melt properly on rice
