Orangensauce (viel Aufwand)
===========================

3 Orangen (unbehandelt! Reformhaus!) duenn schaelen, nur die Schale
ohne das Weiße verwenden, in feine Streifen schneiden
200 ml Orangensaft frischgepreßt dazugeben

40 g Butter schmelzen, darin
60 g Zucker hell karamelisieren lassen, mit Orangenmix loeschen und
5 min kochen lassen
150 ml Weißwein mit
1 El Staerke verruehren, damit die Mischung andicken, aufkochen lassen.
Nun von der Kochstelle nehmen,
4 El Grand Manier hineinruehren, mit
etwas Salz und
Weinessig abschmecken.
